'Eating for England. The Delights & Eccentricities of the British at Table' Nigel Slater


"... Or do I tell them the truth? That for every Brit eating our legendary roast beef and jam roly poly there are a million more tucking into Thai green curry and pepperoni pizza. That more people probably eat chocolate brownies then apple crumble and custard, and that is now easier to find decent sushi then really good roast beef. Should I mention too that despite our love of all that is local, fresh, organic and 'real', we also have a list of edible icons more eccentric then anyone could ever magine?

Eating for England is simply a personal celebration of the food this nation cherishes, the rituals we observe, the curious and even eccentric thing that is the British and their food."

Nie mam pojecia, czy jest to generalne wrazenie kazdej osoby dorastajacej w malo bajkowych, szarych i komunistycznych polskich latach 80', czy tylko moje, ale ja kompletnie nie pamietam tak zywego zainteresowania czekoladkami, herbatnikami i ogolnie slodyczami, jakie opisuje Nigel Slater - dorastajacy w angielskich latach 60'. Zdecydowane i bardzo silne preferencje tez sa mi kompletnie obce. Przez wiele lat, a i do tej pory czasami, dziwilo mnie, ze znajome Angielki wybieraly takie, czy inne czekoladki z pudelka, bo 'tylko te lubia', albo 'takich naprawde nie lubia'. Czekoladka, to czekoladka, czy naprawde, az tak sie roznia?  
Moze zadecydowal kompletny brak wyboru? Ja tak naprawde pamietam tylko krowki i toffi, oraz moze gumy Donald, dostepne, albo i nie. Herbatnikow, batonikow i czekoladek juz nie... A na pewno nie pokusilabym sie o kategoryzowanie: 'tylko dla chlopcow', 'dla starszych panow', 'dla mam', czy 'dla osob w domach opieki'. I nie bylabym w stanie odpowiedziec na pytanie, jakie herbatniki lubila dana osoba: 
"My mother loved a Bourbon biscuit. I often wonder, thinking of her sitting at the table in a quiet moment, could this, with its double layer of chocolate biscuit sandwiching a chocolate cream filling, be the perfect dunking biscuit? "
My father loved a plain digestive, though is it difficult to think of him and the iconic biscuit without conjuring up a picture of him trying to slip an entire, unbroken one into his mouth in one go. "

Slater opisuje przekaski, dania i desery dnia codziennego i te odswietne. Dodajac czesto punkt widzenia 'wczoraj' i 'dzisiaj', albo 'kiedys' i 'teraz'. Tosty, black pudding (kaszanka?), kawa, rice pudding, toffi, wszelakie czekoladki, batoniki i herbatniki, trifle... Zaznacza pokoleniowa roznice w gotowaniu, ogolna dostepnosc kiedys egzotycznych skladnikow i znikajace, czesto tradycyjne, dania i ciasta. Opisuje zmieniajace sie na przestrzeni lat podejscie do gotowania generalnie, a i do zywieniowych wyborow (wegetarianie, weganie) szczegolnie.

Bread & Butter Pudding:
"The French cook with their senses, the Italians with their hearts, the Spanish with their energy and the Germans with their appetite. The British, bless them, cook with their wallets. "

A Custard:
I am probably the only person in England to regularly buy a couple of custards from Marks who is still in possession of his own teeth. "

The Nut Cutlet:
" You wouldn't dream of presenting your Jewish guests with fish carefully manufactured to look like a pork chop. So why wave replica meat in front of someone who clearly doesn't want to see it? British culinary eccentricity mixed with a little thoughtlessness. "

Dodatkowo z pewnym zdziwieniem czytalam o ulubionych, lub znienawidzonych, markach znanych autorowi juz z dziecinstwa. To chyba tez skutek komunistycznego dziecinstwa, bo naprawde nie jestem w stanie wymienic polskich, znanych dawniej i do tej pory, marek specjalizujacych sie w danym jedzeniu. Moze Wedel i Wawel? To wszystko, co przychodzi na mysl. Tymczasem Cadbury, Hovis, Oxo, Ribena, Terry's Chocolate Orange, Tunnock's Teacakes, Bisto, Colman's Mustard, Milk Tray, Black Magic, Terry's All Gold, Quality Street, czy Branston Pickle, znane, lubiane i kupowane 40 lat temu, sa wciaz dostepne, znane, lubiane i kupowane teraz...

I jeszcze, na koniec, kilka slow o brukselce:
Perhaps it should come as no surprise then that the Brussels sprout is a favourite vegetable in a nation with well-established lavatorial sense of humour. Vegetables can tell us a lot about a country. "
